The most difficult part of cooking steak is achieving your desired doneness. Rare, medium rare, medium, and well done all describe certain points that you will try to achieve in cooking your steak. Rare is the least done with a dark red center, medium rare is more pink in color, medium is a pale pink in the middle, and well done will only have a trace of pink. It is very important to consider the size of your steak before calculating cooking time but I try to choose a 1.5 inch thick fillet. For the fillet you will need to sear each side a different amount of time for your choice of doneness. Rare will be about 2 ½ minutes for each side, medium rare about 3 ½ minutes, and medium is about 4 ½ minutes. To ensure your steak is cooked to your liking, you can use a meat thermometer or press with your finger. If you prefer to use a thermometer, be sure to check for the correct temperature related to the doneness of steak you prefer so you know when to take the steak off the heat. The temperatures are 130 to 135 degrees for rare, 140 degrees for medium rare, 155 degrees for medium, and 165 degrees for well done. If you just want to simply press down on the steak with your finger, the softer it is the more rare your steak will be.

The last and most often overlooked step is letting your steak rest. After cooking your steak, it is crucial to let it rest for at least five minutes before cutting and serving. If the steak is properly rested, the fibres of the meat will absorb any running juices back into it, which results in a juicy, tender, and flavorful steak.
