Marc Corrigan will be our Bar Manager. Marc comes from Dublin and has worked in Dublin pubs all his professional life. He started in Mulligan's on Poolbeg Street in 1980 and progressed through the ranks before becoming Bar Manager in 1992. He enjoyed a further 12 years in Mulligan's during which time it became one of the busiest pubs in Dublin, famed for its Pint of Guinness. Marc left Mulligan’s for The Mercantile where he again took up a position of Bar Manager. Richard & I approached Marc late last year and pitched our business plan to him; he wanted to come on board with no hesitation. He is as excited as we are at the potential in Ceol Bar. Marc will be responsible for the day to day running of the bar as well as staffing for both the bar and floor departments.

Al Walsh – Head Chef

Al is a Kildare Native and has worked in a number of kitchens in Ireland, London and Dubai. He started in Naas Court Hotel in 1992 as a Commi Chef and became head chef after 6 years. He then took a position as Head Chef in Crowne Plaza Dubai in 2003; He worked in this 5 star hotel for 6 years before returning to Dublin for family reasons. Al was approached by the Unicorn Restaurant in Dublin upon his return and worked there, again as Head Chef until deciding to take up this venture full time. Al will be responsible for the menus and staffing for the kitchen. He intends to take his Sou Chef, Nadine Clarke from the Unicorn Restaurant with him.

2. Company Description

Promoters and Shareholders

Ceol Bar has three shareholders Richard Mc Vey, Marc Corrigan and Al Walsh. These shareholders have years of experience in the drinks industry between them. Their knowledge and experience of running various venues and restaurants will ensure Ceol Bar has every chance of being as successful as other businesses in the vicinity. Each of them own 33.33% of the business so it is split evenly. Their sole focus is going to be making this bar successful and in doing so they will each work in Ceol bar for the first couple of years to get things off to the best possible start. Richard McVey is to assume the general manager position of Ceol Bar; he has 30 years international experience in busy venues in Ireland, America and Canada. He worked in Whelan’s for 10 years and has endless contacts in the music industry. Marc Corrigan will look after the front of house as the bar manager. He started working in Mulligan’s on Poolbeg Street in 1980 and progressed through the ranks before becoming Bar Manager in 1992, he stayed there for 12 years before moving on to the Mercantile on Dame street. Al Walsh is our Head Chef with years of international experience in award winning restaurants all around the world. Al started his career in Kildare in the Naas court hotel where he became Head Chef after 6 years. Al then left Ireland to become Head Chef in a 5 star hotel in Dubai before returning to Dublin 6 years later.

The first protocol when we agreed to go ahead with this business proposal was to seek legal advice. Thomas Barry and Company solicitors are established since 1991 and based in 11 St Stephens Green Dublin 2. They are highly recommended solicitors just a five minute walk away from Ceol Bar and are the solicitors used by the McVey firm. This was one of the prime reasons we chose them. Products and services

Ceol Bar is a stylish modern bar situated on Camden Street one of Dublin’s most lively streets. It specializes in live music and is used as a venue for up and coming Irish artists to broadcast their music to people.

There will be several bars within the venue offering a wide variety of spirits, wines, domestic and imported beers and a large cocktail menu. One of the bars will concentrate on Irish products including wheat beers, ales, stouts, and porters. Provided on some tables will be a pour your own pint pump so customers can experience it for themselves. As it’s a gastro pub there will be a wide variety of gourmet food available including gluten free options to satisfy everybody’s needs. We have agreed a deal with Omniplex cinema in The Swan centre Rathmines for anyone who orders a meal in our pub gets a discount on their cinema tickets. There will also be a large beer garden available at the rear of the premises.

Long Term Aim of the Business

The long-term goal of Ceol Bar is to be recognized as one of the most incredible, modern, exciting bars in Dublin, while also establishing itself as an electrifying venue. We also want to establish Ceol Bar as one of the most gastronomic places in the city to eat. Although these are very important, the most important thing for any business is to make a profit and you’ll see our year on year revenue growth predictions in the financial projections section of this business plan.
